Easy Homemade Sushi 

without a mat!

Great sushi doesn't have to mean ordering from a restaurant. A piece of parchment paper is all you need to make delicious sushi at home! No special equipment needed.

Ingredients: Cooked Sushi Rice Julienned cucumber Avocado slices Cooked or raw salmon, tuna, shrimp, or veggies To Roll:  Parchment paper Nori Sheets

Place a sheet of parchment paper or bamboo mat on a flat surface. Lay your sheet of nori shiny side up on the parchment.

Spoon the white sushi rice on the nori. Keep the rice from sticking by dipping your fingers in water. Use your fingers to spread the rice out evenly, leaving a border at the top & bottom.

Arrange your fillings on the bottom third of the nori, starting with julienned cucumber. Follow by stacking avocado slices and shredded salmon on top.

Use the parchment paper for leverage and roll the nori tightly. Use wet fingertips to seal the nori at its seam.

Use a sharp knife to cut the sushi roll crosswise into rounds. If your knife is too dull, you may have trouble cutting through the nori.

Serve the sushi with soy sauce or tamari for dipping. Try pairing with wasabi and pickled ginger (easily found at supermarkets that sell sushi).

Tips:  Make a batch of sushi rice ahead of time to speed things up. Always use your sharpest knife when cutting the sushi. Use parchment paper instead of a bamboo mat and plastic wrap.
