The Best Oven Roasted Cabbage Wedges

Deliciously roasted cabbage steaks drizzled with a bacon vinaigrette. This cabbage recipe is similar to Brussels sprouts but better.

Ingredients

1 green or red cabbage 2 tablespoons vegetable oil Salt and freshly ground black pepper

Prep for the Oven

Preheat the oven to 450 degrees. Line the baking sheet with parchment paper. Cut the head of cabbage into wedges.

Coat and Season

Pour the oil over the wedges and season with salt and pepper.  Place the cabbage on the prepared baking sheet in a single layer.

Roast The Cabbage

Roast the wedges for about 15 minutes or until the outer leaves are brown.  Flip the wedges over and roast for another 10 minutes.

Vinaigrette Ingredients

4 strips of bacon 2 tablespoons of olive oil 2 teaspoons of Dijon mustard 1 teaspoon of maple syrup Salt & black pepper 2 tablespoons of vinegar

Prepare Vinaigrette

Cook the chopped bacon over medium heat then transfer to a plate.  Discard half the bacon oil and add the olive oil and vinegar.

Whisk and Season

Whisk in the mustard and maple syrup. Season with salt and pepper.  You can make the dressing ahead then reheat it when needed.

How To Serve

Drizzle the vinaigrette over the roasted cabbage & sprinkle the bacon on top.  Serve the cabbage as a side dish to any protein, such as corned beef, sausages or grilled fish.
