Traeger Smoked Chicken

A brown sugar garlic spice rub gives this smoked chicken an incredible flavor and keeps the chicken tender and juicy! This is a great alternative to smoked brisket to serve at your next cookout.

Ingredients: Whole Chicken Spice Rub Lemon Garlic Cloves Shallot Fresh Thyme

In a small bowl, whisk together your brown sugar, garlic, and dry spices. This spice rub will act as a brine, locking in the moisture.

After drying the chicken with a paper towel, rub the seasoning blend evenly over the chicken. Refrigerate overnight, uncovered.

Fill the hopper of your smoker with your favorite wood chips, or pellets. The pellets will give a wonderful smoky flavor to the chicken. Preheat the smoker to 225 degrees.

Stuff the chicken with lemon, garlic, shallots, and thyme. Tie the chicken legs together. Allow to sit at room temp for at least 30 minutes before placing the chicken in the smoker.

Place the chicken directly on the grill grate. Cover the chicken and let it cook until it reaches an internal temp of 160 degrees.

Remove the chicken from the grill. Let it rest for 15 mins before carving.

Carve the chicken by separating the chicken breasts, wings, and thighs, and serve. This smoked meat is perfect for dinner! No BBQ sauce needed!

TIPS Make the Spiced Rub for Smoked Chicken ahead of time. Use kitchen twine to secure the legs. Use an instant-read meat thermometer.
