The secret to grilling thick-cut pork chops—whether on a Traeger wood pellet grill or on a gas grill—is to brine them first!

Traeger Pork Chops Recipe

Select a Cut of Pork Chop

Use either bone-in pork chops or boneless pork chops that are at least 1 inch thick.

How To Make Brine

Stir together 6 cups of cold water, 6 tablespoons of kosher salt, and 3 tablespoons of sugar in a large bowl. Add the pork chops, and refrigerate for 1 hour.

Preheat Grill

Remove the chops from the brine, rinse them, and pat them dry using a paper towel. Let them sit at room temperature while you preheat your grill.

Smoking Pork Chops

Season with herbs. Place the chops directly on the Traeger grill grates. Close the lid, and cook pork chops for 15 minutes.

Flip Them

Flip the grilling pork chops and cook for another 15 minutes, 30 minutes total cooking time.

Grill Pork Chops

Cook until the internal temperature reads 145˚F on a meat thermometer.

Let Rest

Remove them from the grill and let them rest for 5-10 minutes to allow the juices to settle.
