Sweet and Savory Cottage Cheese Tartines

Move over avocado toast; if you’re looking for a protein-packed, healthy and EASY breakfast, lunch or snack, you’ve got to try these cottage cheese toasts! They feature warm, crisp toast; cool and creamy Hood Country Style Cottage Cheese; and juicy/crunchy veggies or fruit. This is more of a technique than a recipe, so feel free to make the toasts your own (check out some of my favorite savory and sweet combinations in the notes below). You can use any bread you like, regular or gluten free. Brushing the bread lightly with olive oil and sprinkling it with salt gives it a delicious flavor and crunch.

Equipment

  • Oven or toaster oven

Ingredients

Toast

  • Olive oil, for brushing
  • Salt
  • 2 slices of bread
  • 1 garlic clove, peeled and halved (optional, only for savory toasts)
  • Hood Country Style Cottage Cheese

Savory Toast Topping Ideas

  • Sliced tomatoes, cucumber and/or avocado
  • Microgreens, sprouts or fresh herbs
  • Extra virgin olive oil
  • Lemon juice, lime juice and/or vinegar
  • Flaky sea salt and freshly ground black pepper
  • Seeds, chia, hemp, sunflower and/or sesame seeds

Sweet Toast Topping Ideas

  • Fresh fruit, such as berries, sliced peaches and/or sliced melon
  • Jam, warmed if thick
  • Honey or maple syrup
  • Seeds, chia, hemp, sunflower and/or pumpkin
  • Chopped toasted nuts
  • Flaky sea salt, ground cinnamon and/or nutmeg

Instructions

  • Preheat the oven (or toaster oven) to 425˚F (220˚C).
  • Brush the bread lightly with olive oil on both sides, and season with salt. Bake until golden and crisp, about 5-10 minutes. If you’re making savory toasts, rub the warm bread with a halved garlic clove, if you’d like. Let cool slightly, then spread Hood Country Style Cottage Cheese evenly over the toasts.

For savory toasts

  • Top the toasts with tomato, cucumber and/or avocado slices, along with microgreens, sprouts or baby arugula (if you’d like). Drizzle with olive oil and a spritz of lemon juice, lime juice or vinegar. Season the toasts with salt and pepper (and red pepper flakes, if you’d like), and garnish with your favorite seeds.

For sweet toasts

  • Top the toasts with sliced fresh fruit (you can use one fruit or a mix) or a swirl of jam. Drizzle with honey or maple syrup, if you’d like. Sprinkle the toasts with your favorite seeds and nuts, and garnish with flaky sea salt, cinnamon and/or nutmeg.

Notes

Savory Toast Ideas
  • Tomato slices + baby greens and/or basil + balsamic vinegar + olive oil
  • Cucumber slices + sprouts + lemon juice + olive oil + sunflower seeds
  • Avocado slices + grape tomatoes + cilantro + lime juice + olive oil + pumpkin seeds
Sweet Toast Ideas
  • Sliced berries or peaches + maple syrup + chia and hemp seeds + cinnamon
  • Jam + toasted nuts
  • Sliced cantaloupe + blueberries + honey + chia seeds + mint
Tips:
  • You can use any combination of toppings you like!
  • The toasting time for the bread will depend on the kind of bread you use. For thick slices, flip them over halfway through cooking.
  • Rubbing the warm toasts with a halved garlic clove gives them a delicious bruschetta-like flavor.
  • For savory toasts, adding a spritz of acid (such as lemon juice, lime juice or vinegar) brightens all the flavors.
  • If you're using jam and it's really thick, warm it in the microwave or on the stovetop to make it spoonable.
