These Mediterranean Quinoa Bowls are the perfect healthy meal for any occasion. They're packed with flavor and texture, and are drizzled with a creamy Tahini Sauce.

Ingredients

Chickpeas Garlic, parsley and cilantro Cumin  Tahini Lemon juice Honey or maple syrup Quinoa  Cucumbers, tomatoes and olives (or any veggies you like!) Feta (optional)

Blend the garlic and herbs in a food processor.

Reserve half of the processed herbs and garlic for the chickpeas.

Add tahini and lemon juice to the remaining herbs, and blend until smooth for the sauce.

Toss chickpeas with the reserved chopped herbs, along with lemon juice, cumin, pepper, and olive oil.

Assemble the ingredients in serving bowls over cooked quinoa, and drizzle with the tahini sauce.
