Pan Fried Halloumi Salad

This halloumi salad features pan-fried halloumi cheese, quinoa, arugula, mint, pomegranate seeds and a creamy green tahini dressing. It's a healthy one-bowl meal!

Ingredients: -Halloumi cheese -Summer squash -Arugula -Quinoa -Pomegranate seeds -Toasted nuts -Mint -Green tahini dressing


Cut halloumi into 1/2-inch planks then pat it dry with paper towels. This will ensure it sears instead of steams.


Heat a non-stick or cast iron frying pan with olive oil. Once it's hot, arrange the halloumi in the pan. 


Fry the halloumi until it's browned on the bottom, then flip it over and do the same on the other side.


Transfer the fried halloumi to paper towels to drain briefly.


To make the halloumi salad, combine cooked quinoa and arugula in a large bowl. 


Add cooked summer squash (or any veggies!) and the fried halloumi cheese.

Drizzle with green tahini dressing and garnish with nuts, mint and pomegranate seeds.

Serve as a healthy vegetarian one-bowl meal or as a side dish!
