Herby Marinated Feta Cheese

This herby marinated feta recipe is an easy appetizer made with a block of salty feta cheese, fresh herbs, extra virgin olive oil, salt, and chili flakes. A flavor punch in every bite! 
Prep Time: 5 minutes

Ingredients

  • 1 block feta or log of goat cheese, at room temperature
  • Good quality extra virgin olive oil (the best you’ve got)
  • Chopped fresh herbs, such as chives, dill, mint, parsley, tarragon and/or basil (do a mix of at least 2-3 herbs)
  • Aleppo pepper or red pepper flakes (or any chili flakes)
  • Pinch flaky sea salt, optional

Instructions

  • Place the cheese in a small rimmed serving dish or plate, and let it come to room temperature.
  • Drizzle the cheese with good quality olive oil, and sprinkle it generously with herbs.
  • Dust the top with Aleppo pepper or red pepper flakes and flaky sea salt (some brands of feta are quite salty, so taste yours before adding the salt).
  • Serve the marinated cheese with crackers, crostini and/or sliced vegetables, such as cucumbers and radishes.

Notes

Recipe Tips

    • I recommend using a mix of 2-3 herbs for this recipe. Choose between fresh parsley, fresh rosemary, fresh basil, fresh chives, fresh dill, fresh mint, or fresh tarragon.
    • For a marinated feta with a longer shelf life, start by slicing the block of feta into cubes. Then, place the cubes in a mason jar with a tight fitting lid. Fill the jar with good-quality olive oil, ensuring the cheese is just covered. Add your favorite herbs, secure the lid, and store in the fridge for up to 2-3 weeks. To serve, arrange the feta cubes on a plate and sprinkle with salt and chili flakes. Use toothpicks for easy eating, perfect for salads or as a simple appetizer.

Serving Tips

Serve this feta cheese appetizer on a platter with slices of crusty bread, crackers, pita chips, crostini and/or sliced vegetables, such as cucumbers, carrots, and radishes. 
To turn this into a more substantial appetizer, serve it with olives, nuts, and sliced sausage on a cheese board.

Storage Tips

Store leftovers in an airtight container in the refrigerator for up to 2 days. Let sit at room temperature to soften before serving. Add additional olive oil if desired.
