Easy Ice Cream Pie

that happens to be gluten-free!

In this easy ice cream pie recipe, a quick chocolate cookie crust gets layered with different ice creams and a thick layer of fudge. It’s an easy, make-ahead dessert that's always a crowd pleaser!

Ingredients: Cookie crust Crispy chocolate cookies (regular or gluten free) Butter Ice cream filling: 2-3 Flavors ice cream (your choice!) Fudge topping: Butter Heavy cream Light corn syrup Brown sugar Cocoa powder Kosher salt  Vanilla extract Dark chocolate

In a food processor, add crispy chocolate cookies or graham crackers and process until finely ground. You can use regular or gluten-free!

Add melted butter and process until the cookies are the texture of damp sand. Your easy cookie crust is ready to go!

Press the cookie crust into a 9-inch springform pan. The bottom of a measuring cup makes this easy!

Add 2-3 of your favorite ice cream flavors. You can use any combination you like, regular or dairy-free. Spread in an even layer and freeze.

Make the easy fudge topping by combining butter, heavy cream, corn syrup, brown sugar, cocoa powder, salt, vanilla and chocolate.

Pour the cooled fudge topping over the frozen ice cream cake and spread it in an even layer. Freeze until the topping is set.

Tip: You can make this easy ice cream pie gluten-free and dairy free, and nobody will have a clue!
