This Moroccan lamb stuffed squash features a spiced lamb filling, sweet squash, crunchy breadcrumbs, creamy feta and fresh mint. It's the ultimate combination, and easy to make!

Ingredients

honeynut squash

mint

chicken broth

coriander

cumin

ground lamb

cinnamon

onion

tomato paste

cayenne

garlic & ginger

cilantro

pine nuts

Cook the ground lamb in a skillet, then transfer to a bowl.

Using the same skillet, sauté onions, garlic, and ginger. Add the tomato paste.

Add cumin, coriander, cinnamon, and chicken broth, then simmer.

Add the cooked ground lamb, fresh mint, cilantro, and pine nuts. Cook for 5 minutes.

Arrange halved honeynut squashes, cut sides down, on a parchment-lined baking sheet.

Bake the squash halves until tender, then flip them over.

Combine panko breadcrumbs, feta cheese and brown butter.

Stuff the squash halves with the lamb mixture, and sprinkle on the breadcrumbs. Bake for 5 minutes.

Be sure to mound the lamb filling firmly into the squash cavities (and over the top of the squash).
