Warm Corn Dip with Jalapeños and Feta

This warm corn dip is creamy, spicy and always a huge crowd pleaser! It's inspired by Mexican Street Corn, or elote. 

Ingredients

scallions

mayonnaise

jalapeño

corn

garlic

sour  cream

hot  sauce

feta  cheese

cilantro

Melt butter in a large skillet. Add corn and season with salt and pepper.

Add the garlic, jalapeños, and scallions.

Stir in broth, lime juice, mayonnaise, sour cream, and hot sauce to taste.

Simmer until thickened, then remove the skillet from the heat. Stir cilantro and sprinkle with feta.

Place the skillet in the oven and broil until lightly browned on top.

You can use fresh corn kernels straight off the cob, grilled corn (just skip the sautéing step) or even defrosted frozen corn!
