Ingredients

vanilla extract

shredded coconut

chia seeds

walnuts

monk fruit

pecans

cinnamon

flax meal

almond butter

pumpkin seeds

almonds

salt

Combine the dry ingredients in a food processor.

Process and pulse it until the nuts are coarsely chopped.

Melt the wet ingredients and pour them over the dry ingredients.

Pulse until the mixture looks damp.

Spread the granola mixture onto a parchment-lined baking sheet and pat it firmly.

Bake the granola until deep golden brown. Let it cool and break it into clusters.
