Homemade Strawberry Shortcakes

These strawberry shortcakes are flaky and tender with a delicious almond flavor. They're easy to make and you can also make them gluten-free!

Ingredients: -AP Flour or  GF Flour -Almond Flour -Baking Powder -Sugar -Salt -Butter -Egg -Milk -Almond Extract

First, whisk together the dry ingredients: flour, almond flour, baking powder and salt.

Grate cold butter over the dry ingredients, then place the bowl in the freezer to chill. Cold butter is key to flaky shortcakes!

Toss the flour with the butter, make a well, then pour in the wet ingredients.

Mix until you form a shaggy dough. It's okay if it still looks a bit shaggy and floury.

Transfer the dough to a piece of parchment paper and pat it into a 1-inch thick square.

Cut the dough into 9 squares, brush them with egg wash, and sprinkle them with sugar and almonds.

Bake until golden! Tip: You can make the shortcakes gluten free by using GF flour.

Cut the shortcakes in half and layer them with strawberries and whipped cream. 

Or Serve them with butter and jam as breakfast scones!
