Cucumber Mint Raita

This creamy raita is also delicious on cooked fish, lamb burgers and falafel.

Ingredients

  • 1 ½ cups Greek yogurt
  • 1 garlic clove, grated
  • 2 teaspoons fresh lemon juice
  • 1 teaspoon extra virgin olive oil
  • 3 tablespoons finely chopped fresh mint
  • 2 scallions, finely chopped
  • ½ cup finely chopped seedless cucumber
  • Salt and pepper

Instructions

  • Combine all of the ingredients in a bowl, and season with salt and pepper. Stir well to combine. Let sit 10 minutes to allow the flavors to meld.

Notes

Do Ahead: The raita can be refrigerated in an airtight container for up to 1 day.
