Cucumber Mint Raita

This creamy raita is also delicious on cooked fish, lamb burgers and falafel.

Ingredients
1 ½
cups
Greek yogurt
1
garlic clove, grated
2
teaspoons
fresh lemon juice
1
teaspoon
extra virgin olive oil
3
tablespoons
finely chopped fresh mint
2
scallions, finely chopped
½
cup
finely chopped seedless cucumber
Salt and pepper
Instructions
Combine all of the ingredients in a bowl, and season with salt and pepper. Stir well to combine. Let sit 10 minutes to allow the flavors to meld.
Notes
Do Ahead:
The raita can be refrigerated in an airtight container for up to 1 day.
