This streamlined ratatouille recipe is easy to make with an incredible flavor from a few secret ingredients. It's a gorgeous side dish to any meal, and you can even make it ahead.

Ingredients

red bell pepper

garlic

grape tomatoes

zucchini

red onion

thyme and rosemary

yellow bell pepper

Chop the vegetables.

Place the diced vegetables and herbs on a parchment-lined baking sheet.

Roast the vegetables until they're caramelized and tender, about 35-40 minutes.

Transfer the vegetables to a large bowl.

Add fresh basil, olive oil and balsamic vinegar. Season to taste.
