This luscious and creamy sweet potato souffle casserole is the perfect special occasion side dish or vegetarian main course!

Ingredients

Sweet potatoes Kosher salt Butter Cinnamon Nutmeg Brown sugar Pepper Half-and-half Eggs Gruyère cheese

Cook diced sweet potatoes until tender, then transfer them to a food processor with butter.

Puree the sweet potatoes until smooth.

Add cinnamon, nutmeg, brown sugar, half-and-half, salt and pepper, then eggs.

Finally, add shredded cheese and pulse until combined.

Place the mixture in a buttered baking dish and sprinkle with more cheese. Bake until golden.
