This grilled panzanella salad is the ultimate summertime side dish or main course. It’s brimming with fresh veggies, juicy tomatoes, toasted bread and a delicious dressing.

Ingredients

Red wine vinegar Garlic Shallot Dried oregano Anchovy Salt and Pepper Virgin olive oil Zucchini Yellow bell peppers Red onion Balsamic vinegar Bread Tomatoes Basil Mozzarella

In a bowl, combine the ingredients for the dressing and whisk to combine.

Drizzle zucchini, peppers, and red onion slices with olive oil and balsamic.

Grill the vegetables until caramelized and tender.

Grill slices of rustic bread (regular or gluten free) until crisp.

Toss the grilled bread with the veggies, fresh tomatoes, mozzarella and the dressing.
