This corn pasta recipe is as easy as it is delicious. Perfect for weeknights, this easy dinner features bacon, sweet corn, garlic and shallots. 

Ingredients

Bacon Shallot Garlic  Ground black pepper Spaghetti  Kernels  Lime juice Parmesan cheese Chives Extra virgin olive oil

Bring a large pot of water to a boil.

Cook the bacon in a skillet until it's crisp. Add chopped shallots and garlic.

Cook spaghetti in the boiling water, adding sweet corn kernels during the last minute of cooking.

Reserve 1 cup of the cooking water, then drain.

Add the spaghetti and corn to the skillet with the bacon, along with the reserved pasta water.

Toss to coat. Garnish the corn pasta with more Parmesan and chopped chives.
