I love summer gatherings with friends and family, and this 2-minute, simple appetizer, which I’ll be serving all season long, is always a hit. It’s hardly a recipe at all, but rather a technique for turning a simple block of feta or goat cheese into a gorgeous nibble.
You don’t need to worry about measurements—simply drizzle a block of feta or goat cheese with good olive oil (you could even add some honey as well for sweetness), top it generously with herbs, and finish with a sprinkle of chili flakes. Use a mix of any fresh, leafy herbs you have.
Be sure to bring the cheese to room temperature, which will give it a better flavor and make it easier to slice (or spread, if using goat cheese). To turn this into a more substantial appetizer, serve it with olives, nuts, and sliced sausage on a cheese board. Easy peasy!
